Ingredients:
  • 1 ¼ cups bleached cake flour (plus more for pan)

  • ¼ cup fine semolina flour

  • 2 tsp baking powder

  • ¾ tsp kosher salt

  • 1 cup granulated sugar

  • ½ cup extra-virgin olive oil (plus more for greasing)

  • ¼ cup Cannabis-Infused Olive Oil

  • ¼ cup whole milk

  • 1 tbsp grated lemon zest + 2 tbsp lemon juice

  • 2 tbsp grated orange zest (such as Cara Cara or navel)

  • 1 tsp vanilla bean paste or vanilla extract

  • 3 large eggs

  • 1 cup powdered sugar

  • 2–3 citrus fruits (Meyer lemons, Cara Cara, or navel oranges) for garnish

Directions:
  1. Prep the Pan: Preheat oven to 325°F. Grease and flour a 9-inch round cake pan and line the bottom with parchment paper.

  2. Mix the Dry Ingredients: In a bowl, whisk together cake flour, semolina, baking powder, and salt. Set aside.

  3. Make the Batter:
    In a stand mixer, combine sugar, regular olive oil, cannabis-infused olive oil, milk, 1 tbsp each of lemon and orange zest, and vanilla. Beat until smooth. Add eggs one by one, mixing after each. Slowly add in the dry ingredients and mix until just combined.

  4. Bake:
    Pour the batter into the pan and bake for 32–38 minutes, or until a toothpick comes out with moist crumbs. Cool in pan for 10 minutes, then transfer to a rack to cool fully (about 1.5 hours).

  5. Glaze:
    Whisk powdered sugar, 2 tbsp lemon juice, and 1 tbsp orange zest. Drizzle over cooled cake and let the glaze set for at least 30 minutes.

  6. Garnish & Serve:
    Add fresh citrus slices before serving. For an extra indulgence, pair with crème fraîche or mascarpone.
